Executive Chef Mark Ferguson creates imaginative, seasonal American cuisine with Asian accents. The menu features Wolfgang’s classics from over the years – Handmade Agnolotti with seasonal fillings and the Roasted Chino Farm’s Beet Layer Cake - as well as new signature dishes locally inspired by the surrounding environment. Offering breakfast, lunch and dinner, the menus showcase healthy and lighter fare as well as select game dishes. Signature items off of the dinner menu include the House Smoked Organic Salmon and Local Trout with Lemon-Herb Blini and Dill Crème Fraiche; Chinois Style Colorado Lamb Chops with Hunan Eggplant and Cilantro-Mint Vinaigrette; and Pan-Roasted Venison “Filet Mignon” with Juniper Reduction and Fuji Apple-Celery Compote. The restaurant’s wine list features more than 400 selections including a broad representation from the important wine growing regions of the world with a large focus on American producers. |
